PANDACAN GUISO (Pandacan version of MENUDO)

 

PANDACAN GUISO (Pandacan version of MENUDO)

(Sautéed Pork and Chicken with Cheese)

2 tbsp cooking oil.

1 pound pork butt, diced

1 chicken breast, deboned and diced

2 garlic cloves, minced

1 medium onion, sliced thin

1 cup tomatoes, sliced

1 tbsp patis

1 tsp salt

1/2 tsp pepper

1 bay leaf

1/2 cup hot water

1/2 pound calf’s liver, diced

1/2 cup grated cheddar cheese

1/4 cup raisins

1. Heat oil over medium heat, brown pork in oil. Set aside. Brown chicken in oil. Set aside. Sauté garlic, onions and tomatoes in hot oil. Return browned pork and chicken to pot and cook stirring for 10 minutes. Add patis, salt, pepper, bay leaf and water, cover, bring to a boil, reduce heat, simmer 30 minutes.

2. Add liver when meats are tender and cook for another 5 minutes. Add cheese and raisins and cook 5 minutes more. Serve garnished with fried potatoes and fried ripe saba bananas or plantain.

Preparation and cooking  time: 1 hour

Serves 4
